Festival Foods

Festivals and outdoor events are a Manitoba summer staple. If you’re like me, you measure how much of your summer is left by what festival is going on that weekend. Jazz fest in June tells me summer is just beginning. Winnipeg Folk Festival reminds me to enjoy every weekend because summer will go by faster than expected. The Icelandic festival in Gimli tells me we’re in August already and the Morden Corn and Apple festival gives me a quick reality check –summer is coming to an end!

Whatever your festival of choice is, one thing is certain. They all involve food; some even revolve around it. There are a lot of tempting treats some indulge in only during these festivals like mini donuts, beaver tails (or whale tails at Folk Fest), kettle corn, cotton candy, and the never ending options of hot dogs, burgers and ice cream. Not to mention the beverages to wash all that food down with such as homemade root beer and lemonade.

As with everything else, keep in mind that moderation is key. One good way to do this and help control what you eat (and spend) at these festivals is bringing along some treats of your own! (Just make sure to check that this is ok if your festival includes indoor venues.)

My tried and true top picks are:

1) Fruit is both delicious and filling. Stock up at farmer’s markets or roadside stands on the way and snack often!

2) Jenn’s Chewy Granola Bars -I made these to take to the lake this weekend and they went fast! In this post, Jenn shows us how to make them nut free.

3) Sun Dried Tomato Bean Dip – Eat with crackers or veggies – simple and delicious!

4) Rhubarb is in season and these Rhubarb Honey Bran muffins lets you to take rhubarb with you to snack on outdoors.

Roasted Chickpeas make the perfect take-along snack.

5) Roasted Chickpea Snack

The fun part about this snack is experimenting with the spices to season with. It is also simple to make and easy to double or event triple the recipe (and you just may find yourself doing that so yo can share with friends).

INGREDIENTS:
  • 4 cups cooked chickpeas (1 L)
  • OR 2-19 oz cans chickpeas rinsed and drained (540 mL)
  • 3 Tbsp canola oil (45 mL)
  • 1/2 cup preferred spices (cajun, curry, garlic, etc.) (125 mL)

DIRECTIONS

1) Preheat oven to 400°F (200°C).
2) Combine all ingredients in medium bowl and spread onto
parchment paper or greased cookie sheet.
3) Bake for 30 minutes. Stir.
4) Bake another 20 minutes, stirring every 5 minutes. Let cool and
enjoy!
